I would recommend getting as much of that stuff as possible. There's all sorts of chili pastes and peanut pastes and stuff you can get to dip your stuff with. Potato slices are hit or miss (some people love, others hate). But I love mushrooms of all kind, fried tofu, cabbage, Lamb>pork>beef>chicken (at hotpot imo, different with other cuisine). Been a hot minute since I've been to hotpot.If its a fairly authentic place and you ask for the max, it can and will put you on your ass and then your ass on the toilet. I would go with 2 or 3 and you should be fine. If this place has like the little red chili pepper symbols on the menu for levels of heat. Secret Aardvark I've only had one bottle but I recall it tasting like spicy chili x ketchup. But in China it was just plain, spicy, or ask the chef to dial it to 11 for you special. I think most hotpot places in North America probably have multiple tiers of spiciness for you to choose from. But generally speaking, true sichuan hotpot is probably raw habanero hot but with the temperature of the food and the hot broth, it will get you sweating, even if you aren't prone to sweating with spicy food. This REALLY depends on where you go and how authentic it is and how the waiter interprets you asking for "spicy," how "white people talking a big game spicy" you look.So usually that takes 2-2.5 hours if you do it that way. So theres a LOT of socializing, and multiple rounds of ordering meats and then rounds of drinks. In china, hotpot is an "experience" sorta. It takes 10-15 to make it in front of you. 5 minutes later they bring you the pot and other stuff, 5 minutes later they bring the stuff you ordered. ![]() Typically you sit down, 7-10 minutes later they come by and ask what you want. Whatever normal sitdown places take +10/15 minutes max. I would say 70-90 minutes if youre just there to eat.Always looking for good authentic asian cuisine.
